Breakfast Veggies Bagel

I have a friend who sold these veggie bagels in the parking lot of Grateful Dead concerts. I guess you could call it hippie food, but hippies knew how to  make good healthy food.

These bagels are a great way to add veggies to breakfast, and they can even be made the night before and wrapped up in the fridge, ready to go in the AM.

Here is my favorite version of a veggie bagel, but you can  stuff in whatever veggies you have on hand.

1 multi-grain bagel

cream cheese (try Organic Valley cream cheese, it’s taste is far superior to the Philadelphia brand).

bell peppers

tomato, sliced

onion, thinly sliced

lettuce

sprouts

 guacamole spread

1 avocado

1/2 lemon

salsa, about 1/4 cup

salt and pepper

Mash the avocado in a bowl, squeeze 1/2 lemon, sprinkle salt and pepper to taste and stir in the salsa.

Get your bagel, spread a layer of cream cheese on each side, them a layer of the guacamole spread, layer on the tomato, peppers, sprouts, onions and whatever other veggies you can find. Grab a bunch of paper towels, because it is very possible you will make a mess. Also, try not to eat this is a public place. A bib might help, too if you are wearing a nice shirt. But don’t let this deter you from eating it, it is soooo worth the mess!!
