Sausage, Kale and Pepper Sandwich

One of my favorite classic pairings is Italian Sausage and Broccoli Rabe. Although I love broccoli rabe, I thought Kale might be a nice alternative. Kale has a similar hearty, earthy, mildly bitter flavor and is so perfect when sautéed in garlic and olive oil.

In my neck of the woods, Northeast PA, the growing season here is short and unpredictable. Homegrown, local produce is only around for less than half the year. But Kale, Kale is so hearty that it can be grown  in hothouses in the winter, and in backyard gardens in the spring and fall.

For this sandwich, I grilled up some local sausage from Country Time Farm, and sautéed kale  and red peppers in chopped garlic and olive oil. Load the veggies on top and you have a really yummy, fresh take on a traditional Sausage Sandwich.

I try to make this dish healthified by serving it with a side of sautéed kale. A nice cold beer helps, too!

    Choosing five blogs to pass the award onto has not been easy! There are so many I follow for so many and varied reasons that it has been very hard to choose! So many are deserving but ultimately the choice needs to be made!
